Variegated winter-cress is a highly ornamental variety of common watercress that makes a wonderful addition to the winter garden. Large edible, evergreen leaves are heavily marbled with creamy-gold borders. Yellow flower stems appear in spring, but should be removed to encourage perennialization and to avoid rampant reseeding. Flavor is similar to watercress and can be eaten raw in salads or lightly sautéed in butter.
